Condiments

It's been quite a journey. In the last year I've eaten so many new things and made food that I didn't want to eat. I have confirmed that I've got great instincts when it comes to the flavors that I like. Quite a few of the 365 day taste bud experiences were a bust.

My final food challenge, mayonnaise.

Why?

I absolutely hate mayo.

I know hate is a strong word but the creamy white substance ruins my sandwich.

I've never had a taste for it. I'm a mustard gal and my visit to the Mustard Museum was a perfect adventure on day 294. I purchased a few new flavors which I incorporated into my mayo today.

I also got to use an immersion blender for the first time and as amazing as this kitchen tool was it got so hot while I using it that I had to stop before my mayo was whipped up.

The ingredients in this recipe: egg yolk, olive oil, mustard, vinegar, salt and lime juice. All pretty basic and after making it I'm trying to figure out why I don't like the final blending of these ingredients.

I layered all of the components and it looked like a killer lava lamp until the blender hit them. The flavor is a tiny bit heavy toward mustard and maybe that's why I'll like the finished product? It took about 5 minutes to make and because I can tweak the list of ingredients I might just be okay with home made mayonnaise.

Final taste bud challenge felt like a win until I actually ate it. It's still mayonnaise and it ruined my delicious bread.
